New Potatoes with Mustard Dressing

2 1/2 lb new potatoes, scrubbed , quartered, skin left on
2 tbsp. red onion diced
2 tbsp. parsley, chopped
2 tbsp. vinegar
2 tbsp. water
2 tsp. sugar
1/4 salt
1/4 cup Udo's Oil "3-6-9 Blend
Salt and pepper to taste
1. To make dressing: In a bowl, mix vinegar, water, mustard, sugar, and salt.
Slowly whisk in Udo's Oil 3-6-9 Blend. Add onion and parsley.
2. Boil potatoes in salted water until tender approximately 10-15 mins. Drain well.
3. Add hot potatoes to dresing. Toss until well coated.
4. Season to taste. Set aside for a few minutes to let potatoes absorb dressing. Serve warm or at room temperature.
